To make the bacon jam, melt butter in a large skillet over medium-high heat. Add the onions and cook until tender about 3 minutes. Stir in bacon and cook until lightly browned about 2 minutes. Add the remaining ingredients and turn down the heat to low, cover with lid, and cook for an additional 30 minutes. Stir occasionally. Make beef patties. Mix ingredients until just blended. Divide meat into three 6-ounce portions. Lightly flatten into patties 3/4-inch thick. Gently press center of patties down until about 1/2-inch thick, creating a slight depression in each patty; Stick in the freezer until butter is firm. Make the grilled cheese by spreading 1 tablespoon of butter of each slice of bread. In a large skillet, place 3 slices of bread, buttered side down. Top each with 3 slices of cheddar cheese and top with remaining bread, buttered side out. Cover with lid and cook until the bottom browns and get crispy about 2-3 minutes. Flip over and cook until browned and the cheese is melted, about another 2-3 minutes. Grill patties, until well seared on first side, 4-7 minutes. Flip burgers and continue grilling until desired doneness or until meat registers 125 degrees for medium-rare or 130 degrees for medium, 4 to 7 minutes longer. While grilling the meat, whisk together ingredients for BBQ mayo. Build burger. Spread 1 tablespoon BBQ mayo on top grilled cheese sandwich. Spread 1 tablespoon bacon jam on the bottom grilled cheese sandwich. Place beef patty on bottom sandwich. Top with 2 slices bacon, lettuce and top sandwich. Repeat for all 3 burgers.
